Take any two ducks and rub them with butter, salt and pepper. Place the ducks in a shallow roasting pan. Next, combine the following ingredients in a small saucepan and bring to a boil: 1/4 cup butter, 1/4 cup lemon juice, 1 tbs grated orange rind, 3/4 cup orange juice, 4 cloves garlic- minced, 1 tbs ginger, 1 tbs dijon mustard and 1 tsp horseradish. Now pour the mixture over the ducks in the roasting pan and bake at 375 for 1 hour basting often. Serve with any of your favorite side items. I like to use rice with a little of the suace from the pan poured over it. It compliments the duck well.
